New York Style Cheesecake

I go this recipe from allrecipes.com.  It was really good.  I followed the recipe as written and didn't make any changes.  My cake did crack a little but it still tasted really good.

Chantal's New York Cheesecake

Directions-

Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan. In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of springform pan. In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust. Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.

Cake Mix Cinnamon Rolls

Ingredients
  • 2 (.25 ounce) packages active dry yeast (1 Tbls + 1 ½ tsp)
  • 2 cups warm water (110 degrees F/45 degrees C)
  • 1 (18 ounce) package yellow cake mix
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour

  • 2/3 cup butter, softened
  • 2 cups brown sugar
  • 2-3 Tbls ground cinnamon

  • 3 cups confectioners' sugar
  • 1/3 cup butter, softened
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 tablespoons milk
Directions
  1. In a large bowl (I used my KitchenAid), dissolve yeast in warm water. Let stand until creamy, about 5 minutes.
  2. Combine the yeast mixture with the cake mix, salt and vanilla; stir well to combine. Stir in the flour; kneed until all flour is incorporated into the dough. The dough will be a little sticky. Cover bowl and let rise in a warm place for 1 hour.
  3. In a bowl, cream butter, brown sugar and cinnamon.  Deflate dough and turn it out onto a well-floured surface. Roll dough out into a large rectangle. Sprinkle/spread with cinnamon filling. Roll up dough and cut into 3/4 inch thick rolls. Place rolls in a sheet cake pan. Cover and let rise until doubled, about 45 minutes.
  4. Preheat oven to 350 degrees F (175 degrees C).
  5. Bake rolls in preheated oven for 15 to 20 minutes. While rolls are baking, prepare the frosting. In a medium bowl, stir together confectioners' sugar, 1/3 cup butter, vanilla and milk. Let rolls cool slightly then spread with frosting.
I just put the ingredients in my KitchenAid and let it do all the mixing and kneading. I did steps 1, 2, and 3 last night and then put them in the refrigerator.  The cinnamon filling mix is one I got from another cinnamon roll recipe that I really like- but it's really cinnamony.  So if you don't like to much cinnamon then cut it way back. This morning I took them out and let rise for about 1 hr.  Then I baked them about 20 min.

Swirled Pumpkin-Cream Cheese Bars

I made these for a work luncheon. We topped them with a little whipped topping.   They were yummy.  Perfect for fall.

Yield:  Makes 24 bars

6 tablespoons butter, melted and cooled
1 3/4 cups sugar
3 large eggs
1 cup canned pumpkin
1 3/4 cups all-purpose flour
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground nutmeg
1 package (8 oz.) cream cheese, at room temperature

1. In a bowl, with an electric mixer on medium speed, beat butter and 1 1/2 cups sugar until smooth. Beat in 2 eggs, pumpkin, and 1/3 cup water until well blended, scraping down sides of bowl as needed. In another bowl, mix flour, cinnamon, baking soda, baking powder, and nutmeg; stir or beat into butter mixture until well blended. Spread batter evenly in a buttered and floured 10- by 15-inch baking pan.
2. In a bowl, with an electric mixer on medium speed, beat cream cheese, remaining egg, and remaining 1/4 cup sugar until smooth.
3. Drop cream cheese mixture in 24 evenly spaced 1-tablespoon portions over batter. Pull a knife tip through filling to swirl slightly into batter.
4. Bake in a 350° oven until center of pumpkin batter (not cream cheese mixture) springs back when touched, about 30 minutes. Let cool completely in pan, then cut into 24 bars.

Hummingbird Cake

First off, I love the name of this cake. It's not something boring like "banana pineapple cake", even though that's what the cake is. Anyway, I had extra bananas and needed to do something with them. I found this recipe on Bake or Break. I made it and loved it.

Ingredients:
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups sugar
  • 1 teaspoon ground cinnamon
  • 3 large eggs, beaten
  • 1 cup vegetable/canola oil
  • 1 1/2 teaspoons vanilla extract
  • 1 (8-ounce) can crushed pineapple, undrained
  • 1 cup chopped pecans
  • 2 cups chopped bananas
Preheat oven to 350°. Grease and flour a 9X13 cake pan. Set aside.

Combine flour, baking soda, salt, sugar, and cinnamon in a large bowl. Add eggs and oil, stirring until dry ingredients are moistened. Stir in vanilla, pineapple, pecans, and bananas.

Pour batter into prepared pan. Bake for 35-40 minutes, until a toothpick inserted in the center comes out clean.

After cooling, frost with cream cheese frosting. Garnish with pecans, if desired. Store in refrigerator.

Cream Cheese Frosting

Very yummy homemade frosting!!
  • 8 ounces cream cheese, softened
  • 1/2 cup butter, softened
  • 16 ounces confectioners sugar, sifted
  • 1 teaspoon vanilla extract
Beat cream cheese and butter until creamy. Gradually add sugar, beating until light and fluffy. Stir in vanilla.

Gingerbread House Recipe

2 3/4 cups flour
1/2 tsp salt
1 tsp ginger
3 tsp baking powder
1 tsp cinnamon
1/8 tsp cloves
2/3 c molasses
1 egg
1/3 c packed brown sugar
1/2 c vegetable oil

Mix all ingredients thoroughly.  Roll dough in 11x17 inch greased pan.  To prevent pan from sliding while rolling out dough, place a damp terry towel under the pan and grease rolling pin.  Roll out dough until it is even. Use your fingers to ease dough into place.  Make as smooth as possible.  Bake at 300 degrees for 20 to 25 min.  Place pattern on hot dough and cut out completely with sharp knife.  Remove leftover outer edges and cut through all pieces once more.  Return to oven for another 5 to 7 min.  Remove from oven, carefully loosen pieces from pan and place on wire rack to cool.  (I leave loosened pieces in the pan and they are easily removed after cooling.)

DO NOT stack pieces on one another until thoroughly cooled.  Don't store in air-tight containers, plastic bags or the freezer- it's best to let it dry out.

Frosting

2 egg whites
3 c powdered sugar
1/2 tsp cream of tartar
2 Tbl lemon juice

Mix sugar slowly into egg whites.  Add remaining ingredients.  May need more powdered sugar if frosting doesn't seem thick enough.  Use cake decorating bags and large, open decorating tips to use the frosting to assemble your house.

Carrot-Banana Cake

2 cups flour
1 tbls ground cinnamon
2 tsp baking soda
1/4 tsp salt
1/2 c vegetable oil
1/2 c applesauce
1 c sugar
1 c brown sugar
4 large eggs
2 c finely grated carrots
1 c mashed ripe banana
Nuts (optional)

Preheat oven to 350°F. Grease and flour 12 cup Bundt pan. Combine first 4 ingredients into medium bowl. Mix in oil, apple sauce, sugars and eggs. Add carrots and banana. Blend well. Pour into Bundt pan and bake about 1 hour. Let cake stand in pan 10 minutes. Turn out onto rack and cool.

This cake is very moist and pretty sweet. The recipe had a cream cheese frosting. We tried it and didn't like it. I scraped it off and made a powdered sugar glaze and drizzled that one the top. PERFECT!! You could also just sprinkle it with powdered sugar. I imagine this recipe would make great muffins. Also, I don't think I even put in 1/2 cup of oil. I had some left over applesauce and put all that I had of it into the measuring cup and filled the rest of the cup with oil. I think you could leave out the oil completely and just use applesauce. It would be a little healthier.
